Sardines on toast!

Actually even when I'm not in a rush there is something very satisfying about opening a tin of sardines in tomato sauce and smearing them all over the toast and, of course, eating them!!

Yes I love fish Jazzj. We used to have a fish and chip shop and sold haddock, cod, halibut, skate, meat pies, patties, fish cakes, sausages, and many other things. We also had a healthy choice of a sandwich bar as well.

Spaghetti Bolognese is a good standby and usually most people enjoy it as it's a very tasty meal. I usually do garlic bread with it also which is easy.

Another is chicken breasts with peppercorn sauce, broccili, corn on cob, peas and roast potatoes. A very nice meal and easy to make.

One of my favourites is a chicken casserole which is done in the slow cooker. Make time to cut all the various vegetables the day before i.e. onions, leeks, parsnips, celery, garlic, carrots, put some pulse in to give it a bit of thickness also I add a tin of mushy peas and two tins of chicken soup, chicken oxos and well seasoned but not overdone. When the soup is boiling and not far from ready drop a couple of dumplings in and wow you've got a lovely, delicious meal which will last for three day's or you could freeze some for a quick meal another day.

Oh bless you my dear friend Parchy. If only you were round the corner I would willingly bring you a hot home made meal every night you poor tortured soul.
Tonight it's rump steak, chips, peas, mushrooms, tomatoes, peppercorn sauce with a nice bottle of cool wine followed by a lovely gateau and fresh single cream. If you would like to join us all in my husband's birthday celebrations you are very welcome. The tables set with a fifth place which says "awaiting Parchy's arrival".

Hi greydo just about anything and everything I can put into my slow cooker I find quick and easy, economical too.

We're particularly partial to sausage and bacon lightly fried first then add onion gravy pile it into the pot and leave until you can bear the delicious smell longer then dive in. Serve with mashed potatoes to soak up the juices...yum.

Anything, to my mind, that involves prepping is hardly 'I'm in a rush meal' fodder! I get home from work late and for me it's either microwaveable heaven, beans on toast topped with grated Red Leicester or a can of Lild Chicken soup bulked out by dices pre-cooked chicken, mushroom and chopped spring onion and then microwaved to perfection. Sometimes a single guy cannot see much beyond five minutes at 9pm at night!

Oomph Greydo, don't know where to begin on this one.
Pasta is an excellent fast food and sauces made with cream, bacon and cheese are almost instant. There are loads of options depending on what is in the fridge.
Eggs are also one of the classic fast foods from Spanish omelette to poached on toast.
Canned foods are often overlooked as the basis of instant meals, not just beans on toast but as fillers for a microwaved jacket potato or with leftover vegetables.
Rice is also a quick filling base for meals. Frozen precooked rice can be used straight from the freezer with veggies added to make a quick dish.
I do all of these from time to time but probably choose pasta plus as my favourite quick dish

I'm with you G-man. A bacon pasta or stirfry is sooooo quick. I also get those lovely chinese Egg Noodles now and add them to some stirfried bacon, chili, onion, garlic and ginger. PUt the noodles in and add some soy and sweet chili sauce - delish!!!!!!!!!

Spaghetti Limone Parmeggianio...a recipe from Gwyneth Paltrow. No, she's not a personal friend, I ripped it out of a magazine! It's light, quick and very easy. Failing that, nothing beats cheese on toast (with Marmite!) or beans on toast, or a nice can of chunky soup and some good bread, or an omelette.

It's just cooked spaghetti tossed (while still hot) in a paste. The paste is made of finely grated parmesan (fresh, not the stuff in a container), fresh lemon juice, finely grated lemon zest, little bit of olive oil and a spoon or three of the pasta water, and seasoning. You can sprinkle with a few torn up basil leaves if you like basil, and a bit of the grated parmesan.

Not fancy at all, really simple and easy! Just do all the grating while the spaghetti's cooking and voila!

So right about pasta sauces Fruitcake. I don't know why people buy some of the rubbish sauces in jars which are high in sugar and salt when it is so easy to make a sauce as you suggest. In the summer I love adding good olive oil and chopped cherry tomatoes, garlic and herbs fresh from the garden to freshly cooked, drained pasta. Ricotta cheese is also good and suitable for veggies (which Parmesan is not unless specifically stated on the pack).

I usually make my own sauces for pasta, Sidesalad, but I keep a few jars in for emergencies...the Co-op's healthy versions...low fat, low salt and low sugar, they're not too bad.

I'm obsessive about checking labels on anything in a jar!

I grill the bacon and while that's grilling I stick two pieces of bread in the toaster and while that's toasting and grilling I fry an egg and it all comes together in 8 mins! That's pretty quick I think. It's all a case of multi tasking but I'm a working mother and had to learn multi tasking very quickly!

At what age do you reckon it kicks in as my 14yr old displays no signs whatsoever? I remember from a young age being able to do several things at once but she struggles... She's very smart don't get me wrong...

I love to know what people are up to. I often say to hubby so so has come opposite or the grandchildren are here from next door. So what he says doesn't interest me in the least. I could hit him quite nicely on the head as I like a good natter about other people (not maliciously) but interest.

You are right about women multi-tasking, I do one job, start another and then another and then go back to first job which I have forgotten about. Are we all the same do you think? Also inbetween I have a quick look (or it's supposed to be) at the form which can delay me for yet another hour.

Rice...mushrooms.tomatoes...onion..tin of Baxters( campbells) "thick" mushroom soup.first put rice in microwave to cook and as it cooks.cut onion....fry in a little oil..add mushroome add fresh tomato roughly cut..cook all slow..stirring..add tin of soup thinned a little with milk..cook all on medium heat..when microwave pings..all is ready to eat

but fastest for me is scrambled eggs..turn grill on or toaster..put 4 eggs in pyrex bowl..beat..add little milk..ground pepper..non-stick pan..little butter (toast on now )..cook eggs slow..secret with sc eggs is..watch !..and turn off when still wet..eggs will cook on a little.....toast done..on plate..egg on toast..yum..

For a spiced-up baked beans on toast, first lightly fry fresh green chilli, spring onion, then add half a teaspoon of cumin seeds, less of black mustard and pomegranate seeds. When the seeds start popping, pour in the baked beans and heat through. If you like it, fresh green coriander to top off.
